Pizza Dough

Makes a 16" pizza
1 cup lukewarm water
2 1/4 tsp dry active yeast (not quick rise) (this is equivalent to 1 packet)
1 tsp honey
1 tbsp olive oil
1 tsp salt
2 1/2 cups all purpose flour (spooned in and levelled with a knife)

Put the water, yeast and honey into the bowl of a stand mixer. Let stand about 5 minutes, until bubbly. Add remaining ingredients, and using dough hook, knead on lowest speed for 6 minutes.

Cover and let rise for 45-60 minutes.

Bake at 450 (475 non-convection)
16-20 minutes
